Easy Sweet 'n Tart Key Lime Pie


Is there any dessert that screams "SUMMER!" louder than Key lime pie? Its touch of sweetness mixed with tart citrus makes it the perfect treat for hot summer days.


If y'all know me, you know that I'm not exactly skilled in the kitchen, so any recipe I send your way is gonna be three things:

  • An easy recipe

  • A fast recipe

  • A recipe that uses very few simple ingredients

These light and refreshing mini Key lime pies are no different, so without further adieu...

You will need:

  • Sweetened condensed milk (14 oz. can)

  • 1/2 c. Key lime juice (freshly squeezed or bottled; you can totally substitute normal limes or lime juice if you can't find Key limes - keep it easy)

  • 1/2 c. sour cream

  • 1 c. whipped topping

  • 1 tbsp Key lime zest

  • 6 mini graham cracker crusts (I used store bought crusts, but if you're feelin' ambitious, you can make your own easy granola crusts!)

Combine all ingredients and whisk together until smooth. Pour even amounts of the mixture into each crust and freeze overnight. Remove 10 minutes before serving and garnish with blueberries, mint leaves, lime zest, or (my favorite) more whipped topping. Enjoy with a crisp white wine or glass of champagne!
